Recipe – Mutton Biryani

Introduction—Mutton Biryani, another jewel in the recipe world which is a combination of mutton curry and rice preparation.

Requirements—Cleaned Utensils, Fresh Mutton 300gm, meat pounding tool (tenderizer), Water jug, spices, meat masala, tomatoes, onions, green chillies, red chilli powder, fresh yogurt, salt, turmeric powder, coriander powder and leaves, coconut powder, ginger garlic paste, edible oil, rice, cumins, pan or pressure cooker and your energy to mix two preparations.

Initial Preparations:-

  1. Bring fresh mutton
  2. Wash it thoroughly with running water or by sinking in a tub of water.
  3. Drain water.
  4. Use yogurt , red chilli powder, salt, turmeric to marinate the mutton.
  5. Ginger garlic paste can also used for marination.
  6. Advisable to refrigerate for a period of 5-6 hours or more for better tendering results ie softer.

Main Preparations:-

  1. Take the marinated mutton out of the fridge.
  2. Wait till mutton temperature drops and set to normal temperature.
  3. Till then
    1. Chop onions,
    1. Cut green chillies
    1. Prepare tomato puree
    1. If you have curry leaves then wash them too.
    1. Wash the coriander and extract its leaves.
    1. Make a paste of coconut powder (optional).
    1. Take rice and let it be soaked for 30 minutes in water.
  4. After pounding marinated mutton, cut it into equal size pieces or let it remain uncut.
  5. Start the burner and boil 2-3 tablespoons of edible oil along with cardamom, cumin, and cinnamon at medium flame.
  6. Add chopped onions and green chilies after 5-6 minutes.
  7. Stir the mixture well till turns yellowish in color.
  8. Add the prepared mutton and stir for 7-10 minutes.
  9. Cover the pan or cooker and let it cook for 8-10 minutes at medium flame and stir once or twice during the period.
  10. Use meat masala powder of your choice and sprinkle it along with red chili powder, turmeric, salt, and other spices of your choice.
  11. Stir well in this mixture for at least 5 minutes.
  12. Add curry leaves and stir again.
  13. 2-3 whistles of in case of the cooker.
  14.  Or get the delicious smell in case of the pan.
  15. Now in the meantime prepare rice dish.
  16. Take another pan and add 2-3 glass of water and boil it.
  17. Add black cumin and cloves along with salt.
  18. You can also add bay leaf for a pleasant aroma and taste.
  19. Now drain the water of rice completely.
  20. Add rice in boiled water and allow it to cook for 20-30 minutes.
  21. You will feel a cooked rice smell.
  22. Empty the boiled rice to filter and drain the water.
  23. Now check you mutton preparation.
  24. See if the gravy is ready then you can add coriander leaves, fried onions, green chilli slices and stir well the mixture.
  25. Add the rice above the mutton mixture along with edible oil or ghee or butter and cover the pan or cooker.
  26. Let it be cooked for 3-4 minutes together.
  27. Now take a bigger pan or utensil and filled it 60% with water and let it be boil.
  28. Keep the rice and mutton biryani mixture pan in this and make the low flame.
  29. Let it cook for 20 minutes and then off the burner.
  30. After 10 to 15 minutes, remove the cover of pan.
  31. Your delicious, mouth-watering and spicy mutton biryani is ready to serve.
  32. Use coriander leaves for garnishing.
  33. Cheese garnishing can also be done for a different taste.
  34. Saffron garnishing or saffron can be added in mixture for a royal taste and a color.

Note: Mutton with bone will add more taste in the gravy as the bone flavour will make the gravy more different taste.
